Coast hires top chef

Richard Birch - Prue's protégé

The Claremont Hotel's Coast Bar & Brasserie kitchen has a new chef at the helm.

Richard Birch - a protégé of Prue Leith's restaurant in London's Notting Hill Gate has joined as executive chef after his former post at Samphire on North Quay in Douglas.

The restaurant closed earlier this year.

Richard has worked from the age of 14 at Hunters in Wales before taking his career professional at Leith's - which gained its first Michelin star while he was there.

"Big on fish"; he says he'll be ensuring local Manx produce and seafood firmly has a place on the menu - which he says will be "simple and excellent".
